Ultra-Processed Foods: Are They Bad for You? New Study Links UPFs to Lung Cancer Risk

August 3, 2025

18:35

Quick Summary

A major new study has linked ultra-processed foods—like ready meals, soft drinks, and fast food—to a significantly higher risk of lung cancer, even after accounting for known risks like smoking. While the evidence is observational (not proof of causation), the research adds to a growing body of warnings about the long-term health risks associated with diets high in ultra-processed foods.

Ultra-processed foods make up a startling share of modern diets and are now tied to a significantly higher risk of lung cancer, adding to a growing list of reasons to rethink your relationship with highly processed convenience foods. Small, consistent changes toward less processed eating can make a real difference in long-term health.

What Are Ultra-Processed Foods (UPFs)?

Ultra-processed foods (UPFs) are industrial formulations made mostly from substances extracted from foods or synthesized in laboratories. They usually contain:

  • Multiple processing steps
  • Long lists of additives and preservatives
  • High levels of salt, sugar, and unhealthy fats
  • Flavour enhancers and texturizers

Common examples:

  • Packaged bread, cakes, cookies, and breakfast cereals
  • Fast food burgers, hot dogs, and pizza
  • Ice cream, sweetened yogurt, and confectionery
  • Instant noodles, packaged soups and sauces
  • Fizzy drinks and sweetened fruit beverages

In the US and UK, UPFs make up more than half the average adult diet, mostly due to their convenience, affordability, and aggressive marketing.

What Did the New Study Find?

Study Design

  • Researchers analyzed data from over 100,000 people, aged 55–74, as part of the US Prostate, Lung, Colorectal, and Ovarian Cancer Screening Trial.
  • Dietary habits were assessed at the start; participants were categorized based on their UPF intake.
  • Health was tracked for up to 12 years, focusing on lung cancer outcomes.

Key Findings

  • People who ate the most UPFs were 41% more likely to be diagnosed with lung cancer compared to those who ate the least.
  • The risk was elevated for both main subtypes:
    • 37% higher risk of non-small cell lung cancer (NSCLC)
    • 44% higher risk of small cell lung cancer (SCLC)
  • Top UPF sources included lunch meats, soft drinks, and convenience foods like instant noodles and processed snacks.

Why Are These Findings Important?

  • Lung cancer remains one of the world’s deadliest cancers, with 2.2 million cases and 1.8 million deaths globally in 2020.
  • Past research has linked UPFs to more than 32 harmful health effects—including heart disease, obesity, diabetes, mental health problems, and premature death.

Why Might UPFs Increase Lung Cancer Risk?

Researchers point to several likely mechanisms:

  • Poor Nutritional Value: UPFs lack fiber, antioxidants, and key micronutrients, while being high in refined sugars, salt, and saturated fats.
  • Harmful Additives and Contaminants: Processing creates compounds like acrolein (a lung irritant also found in cigarette smoke), and advanced packaging chemicals can migrate into food.
  • Changes in Food Structure: Industrial processing alters how foods are digested and how nutrients are absorbed.
  • Inflammation and Obesity: High UPF intake is linked to chronic inflammation and obesity—both of which increase cancer risk.

“Industrial processing alters the food matrix, affecting nutrient availability and absorption, while also generating harmful contaminants,” researchers said.

How Strong Is the Evidence? What Are the Limits?

  • Observational Study: The research can’t prove UPFs cause lung cancer; results show an association, not causation.
  • Smoking Not Fully Measured: Smoking is the biggest risk factor for lung cancer. While the study controlled for smoking, it did not account for smoking intensity, which could influence the results.
  • Diet Data Was Self-Reported, Just Once: People’s diets can change. The study only measured diet at the start.
  • Small But Important Number of Cases: Even with over 100,000 participants, the number of lung cancer cases (1,706) is relatively small over a long period.

Despite these limitations, the findings are consistent with broader evidence showing that UPFs undermine long-term health.

What Can You Do? Practical Nutrition Advice

It’s not about perfection—small shifts matter.

  • Cook more from scratch when possible.
  • Increase whole foods: Add more vegetables, beans, and grains.
  • Read labels: Check for long ingredient lists—often a sign of UPFs.
  • Balance, not bans: Don’t stress about eliminating UPFs; focus on reducing frequency and portion size.

Why Are UPFs So Prevalent in Modern Diets?

  • Convenience: Ready-to-eat, heat-and-go foods save time.
  • Affordability: Often cheaper than fresh, whole foods.
  • Aggressive marketing: Especially targeted at busy families and young people.
  • Food industry innovation: Mass production has made UPFs ultra-accessible.

Should You Be Concerned?

While you don’t need to panic, these findings do make a compelling case for paying more attention to how much of your diet comes from ultra-processed fare. The cumulative effect of decades’ worth of research is clear: diets high in UPFs increase your odds of heart disease, cancer, diabetes, and other chronic problems.
